I think having creation showcases over whole plots is a better idea. Once I finish building something big I save the schematic and delete it from my plot so my plot is never full anyway.
Maybe make a machine showcase. So for example, show off a CPU and draw diagrams of its inner workings. This will be something that will catch the eyes of people that actually know about redstone and don't just follow Sethbling. Display shit from a circuitry standpoint, ya know?
I like that idea a lot actually... get technical for once! But not overly so, if possible it should be kept at an understandable level without talking about derivations of algorithms and such.
Basically what neo said, but don't entirely limit it to CPUs. Have people showcase interesting builds and explain them in detail. Large-scale projects are probably best for this type of showcase, rather than individual components (think back to the RDF channel and things like tetris (but actually explain how it works, unlike the tetris video)).
If I were to do this, I would start out with an interesting trailer of the project, show it in action, then proceed to a lengthy explanation of it so that people who don't want to watch through it can just skip it. We should also provide a schematic/world download for each project.

Problem that im having atm is this; The tool that i use to record in-game and make nice footage is only at 1.6.4 ;_; I would really like to make a "Build showcase" this weekend, but im not sure if i want to do it without this mod...
