Back before the Redstone Update, I built a fully functional 5 card-draw Poker WITH winning detection. I took a long break and am now getting back into it.
Unfortunately, the Redstone Update broke it.
It was slow and slightly unstable anyway. I'm possibly going to rebuild Poker to be even better than before. 
Texas hold 'em has a similar winning detection to 5 card draw. It wouldn't be too difficult to adjust the game play, I don't think. Though I could be wrong.
As for your other ideas... I don't really know what they are, so I can't have a say in those. Haha.
