What do you like the most about redstone?: What you can build with it.
What's a thing you have made which demonstrates redstone knowledge?: I have made a pretty big redstone calculator with two save states.
What does the thing do?: It can add and subtract.

An adder/subtractor isn't really enough, you can apply for school server though with that knowledge. Feel free to make another application when you have a more advanced knowledge.
