What do you like the most about redstone?: Redstone is literally the only thing I've dedicated my time playing Minecraft to. I was introduced to logic gates on my very first main server, and I've been using redstone ever since. If I had to choose a favorite thing about redstone overall, I would have to say that it's a very eclectic material for creating. You can build anything from a simple code-lock, to a board game, to a fully functioning computer.
What's a thing you have made which demonstrates redstone knowledge?: More recently, I've been focusing my redstone builds on automated gaming. My most successful game built is Connect Four. It uses some basic logic gates along with a 7-bit bi-directional shift register (the shift register is not of my own design, but I do understand the logic behind it, and I would be happy to provide the link to its originator if you need it).
What does the thing do?: Well, to put it simply, it plays Connect Four. It's fully automated, with two separate control chambers (so there's no cheating), and a 7-bit display to choose your slot. The two things I'd still like to add to it are "Win-Detection" and "Smart Reset."

This video series was originally intended to be a tutorial, but the videos were never finished. I hope they suffice, as this will be my first build should I get accepted, and pass the test.
